Warming Winter Mushroom Recipes
Winter is upon us and I have been busy creating some winter warming recipes. Here goes....
Warming Shroom Tonic
1 cup of Cashew Milk
1 tsp Reishi extract
1/2 tsp maca powder
1/4 tsp ginger powder
1/4 tsp cinnamon
1 tsp honey
1 tsp coconut oil
Heat all ingredients in a small pot and simmer for 5 mins. Cool slightly. Add to a blender blitz until combined. The foam comes from the coconut oil emulsifying with the other ingredients.
Veggie Broth
1 brown onion, chopped
4 cloves garlic, skin peeled
2 stalks celery, chopped
1 medium carrot, chopped
1 medium potato, chopped
½ cup mixed mushrooms, cut in half
3 bay leaves
1 tbsp soy sauce or tamari
8 cups water
Dash of salt and pepper
Place all the ingredients in a large pot on a medium high heat. Bring to a gentle boil. Reduce heat and let simmer for at least an hour covered with a lid. Strain thoroughly removing all vegetables and bay leaves.
Can be used to make vegetarian soups, gravies, risottos, stews, stir-fries and more.
Shroomy Pick-Me-Up Soup
1 serve vegetable broth (see recipe)
1 tsp sesame oil
2 cups mixed mushrooms, diced
1 clove garlic, crushed
2cm grated fresh ginger
2cm grated fresh turmeric or 1 tsp ground turmeric
1 red chilli, de-seeded and sliced thinly
Salt and pepper to taste
Optional garnishes
1 cup fresh herbs, chopped (parsley, coriander etc)
1 cup bean shoots
Heat oil in saucepan over medium high heat. Add mushrooms and sautee for 2 minutes. Reduce heat to medium add garlic, ginger, turmeric and chilli stir fry till fragrant, about 2 minutes.
Gently pour in the veggie broth and cook till heated through.
When hot season to taste and add garnishes.
Serve and enjoy....
